- 80g rolled oats
- 40g oat flour (made from 40g rolled oats)
- 40g ground almonds
- 1/2 tsp baking powder
- 70g maple syrup
- 30g unsalted butter
- 5g honey

Directions
- Blitz 40g rolled oats in food processor to make oat flour.
- Combine all the dry ingredients in a large bowl.
- In a pan add in the butter, honey and maple syrup and put on a low heat until the butter has melted.
- Pour the liquid mixture into the dry ingredients and use a metal spoon to combine. It may look a little dry to start with but keep mixing and it will come together.
- Divide the mixture into 10 or 12 equal amounts, spoon onto a baking tray lined with a silicone mat or greaseproof paper.
- Use your fingers to press into discs about 5mm thick. Wetting your fingers can help.
- Bake in a pre-heated oven at 160C for 10/13mins, turn the oven off when theedges start browning.
- Take the biscuits out of the oven to cool for 2mins, flip them and then put back in the oven to cool completely.
