Banoffee Pancakes

Ingredients

  • 60g self-raising flour
  • 20g vanilla protein powder
  • 1/2 tsp bakng powder
  • 1/2 tsp cocoa powder
  • 1 medium egg
  • 1 egg white
  • 100g yoghurt
  • 1/2 tsp coconut oil
  • 75g banana, sliced

Directions

  1. Combine the flour, protein powder, baking powder and half of the cocoa powder in a bowl and make a well in the center.
  2. Add the egg, egg white and 70g of the yoghurt and whisk until smooth.
  3. Melt the oil in a non-stick frying pan then fry large spoonfuls of the batter for a minute on each side until puffed up and golden.
  4. Layer the pancakes with the remaining yoghurt and the sliced banana then dust with the remaining cocoa powder.
